Our soil’s optimal mineral content and other geological characteristics along with our western facing exposure give us the opportunity to grow Bordeaux varietals of the extraordinary quality required to produce world-class red wine. We have planted all five of the major Bordeaux varietals: Cabernet Sauvignon, Cabernet Franc, Merlot, Malbec, and Petit Verdot. But the land’s potential can only be achieved if at every decision point along the way we make the choice to maximize quality. Our scientific matching of the rootstock and varietal to the specific soil conditions as well as our pattern of planting are results of that choice. The choice to maximize quality is also reflected in how closely our vineyard manager, David Abreau, works with winemaker, Patrick Sullivan, to make sure everything we do in the vineyard maximizes the potential quality of the wine we will produce. They closely supervise all the work that is performed in the fields and thoroughly train workers to optimally care for the vines. Often we drop (cut off) over half of the fruit before maturity in order to intensify and concentrate the flavor of the remaining grapes. We pick in very small sections, picking only the vines that are at their peak, ensuring only ripe flavors are included in each lot. These micro picks are kept separate and fermented and stored in individual lots until they are ready to be blended. This meticulous attention to detail and consistent focus on quality has allowed us to create wines that we are very proud of and we will continue to try to improve upon.
